Charred crumbs excavated at Shubayqa in Jordan are roughly 14,000 years old, made from wild cereals ground and baked by hunter-gatherers thousands of years before anyone planted a field, which reverses the old assumption that farming came first and bread followed. The rise comes from yeast eating sugars and releasing carbon dioxide that gluten traps. And the politics are consistent across centuries: bread riots preceded the French Revolution, bread queues preceded the Russian one, and a 2008 spike in wheat prices ran ahead of unrest across North Africa and the Middle East.
